» SUGAR COOKIES RECIPE
» INGREDIENTS
1/4 cup salted butter (softened)
1/4 cup granulated white sugar
1 tsp pure vanilla extract
1 large egg white
11/4 cups all-purpose flour
1/4 tsp baking powder

» METHOD
Beat butter & sugar using a stand mixer or hand mixer until fluffy (use flat beater attachment for stand mixer)
Add vanilla & egg
Beat until well combined
Add flour & baking powder to stand mixer bowl & process first at low speed
Gradually increase speed to high & wait for the dough to come together
Roughly shape dough into a disc (or two discs if doubling the recipe)
Cover with plastic wrap or store in ziplock bag and chill for 2 hours
After 2 hours, let dough on counter for 5-10 minutes
Place sugar cookie dough on well floured surface
Roll into 1/4 or 1/2 inch thickness
Use cookie cutters to cutout shapes and chill shapes for 30 minutes
Preheat oven to 375 °
Place cutout sugar cookie shapes on prepared baking pan
Bake for 7 minutes in the preheated oven
Cool sugar cookies completely 😋

» ROYAL ICING RECIPE
» INGREDIENTS
2 cups confectioners sugar (sifted)
11/2 tbsps meringue powder
1 tsp pure vanilla extract (optional)
4 tbsps water
Food gel colors (optional)

» METHOD
Whisk sugar and meringue powder at low speed using a stand mixer
Add water 1 tbsp at a time and whisk at low speed
Keep processing until all of the sugar & meringue powder is combined well
When you lift the whisk up, the icing should drizzle down and smooth within 10 seconds
If your icing is runny, add powdered sugar one teaspoon at a time to fix the consistency
If your icing is too thick, add water 1 teaspoon at a time to thin it to desired consistency
